When placing au gratin, custards, and meringues
or crème brulee on the bottom rack, the broiler like
heavy stainless steel salamander guarantees you
professional results. When used on full power
(unit has a four position switch). The four quartz
tubes are heated red-hot within minutes. The
salamander crisps, crusts, toasts and glazes. It's
the secret that is behind a good "Croque-Monsiuer"
and a crystallized one-pass crème brulee. The
salamander is the backbone of the bistro/brasserie
restaurant trade. The adjustable height (2-1/2" to
9-7/8") of the unit allows for an almost infinite
variety of temperatures. Both UL & NFS approved.
